food is quite the centre of a lot aspects in my life and from someone who has suffered with an eating disorder I want to create a space that Is food positive, making plates of food without the restriction . food is here to fuel our life so we can live and face each day and create better. I hope you make this recipe with love and kindness to yourself and don’t be afraid to put your own spin on it.
ingredients:
paprika, turmeric , cumin, star anise , cardamon pods, coriander seeds, garlic , ginger ,chilli and fresh coriander
mushrooms, grated carrot , red onion, spinach , crispy kale , rice ,quinoa , cream and peanut butter.
method:
now I am not really someone who has a structured go to method as I usually go with an order my mind choses depending on mood but I love organisation so heres a laid back standard one!
lets get some tunes on and chop and grate the veggies , slice or crush the garlic, slice the chilli take seeds out if you wish have a meltdown over the onion because ouch eyes , grate the ginger ( tip store the ginger in the freezer ) . put a little bit of oil or butter in a pan and stir in the spices including the ginger , garlic and some of the chilli and a spoonful of peanut butter and wait until fragrant. now lets put the veg in wait a couple of minutes to soften and let the aroma warm your senses up. now put the cream in and let simmer while we cook the rice and quinoa in the same pot ! quinoa and rice is a nutty flavour with such a sensory friendly vibe. with the kale drizzle with oil and salt and air fry or oven bake for a few minutes . once all cooked lets dish up in your favourite bowl however much you like , doesn’t matter if its been a low productive day you deserve comfort. don’t forget to sprinkle over the fresh coriander and chilli.
go for seconds if you wish, don’t feel shame. its also okay to carry on eating because its tasty use your favourite fork , add things to your plate , take things out of the recipe , eat as messy as you like this is something you’ve created. no matter how much you’ve eaten , done in a day , weigh etc you are worthy and as my favourite band the 1975 says “ if you never eat you will never grow”
